Indonesian JB agar is a complex hydrophilic colloid extracted from the cell wall of red seaweed (Gracilaria spp and Gelidium spp) and is often used as a gelling, thickening and stabilizing food additive . Agar does not require the addition of other products or ions for gelation, and its strong gelling ability allows the gel to be formed from very dilute solutions. The resulting gel is firm and strong with a short texture.
